The perfect chicken gyros is not neat, nor is it delicate. Wrapped tightly in greaseproof paper, it is a heavy, structurally sound masterpiece. With every bite, you get the crunch of the fries, the char of the spiced chicken, the cold punch of garlic yoghurt, and the cushion of warm bread. It is street food perfection.
